A couple of weeks ago, I tried the Zucchini-Bread recipe on epicurious.com. I did a couple tweaks, and it still came out deliciously moist… mmmmm…
My changes to the recipe were:- adjusted baking powder for altitude
- substituted allspice with clove
- 1 1/2 cups sugar
- 1 cup vegetable oil
- substituted walnuts with pecans
